Last night, I had a quiet Friday evening in with a good friend for a wallet-friendly home-cooked meal.  When she arrived, however, neither of us were particularly hungry, so we postponed meal preparation in favor of uncorking some riesling.

Well, I’ve had – a day.  You know those days.  I’ll keep the complaints to myself and get right to nicer things.

Simple foods and good aesthetics always brighten my mood, so dinner was perfectly comforting.  A salad of baby spinach, watermelon, feta, and fresh basil.  Incredible combination, seriously.

Tonight was a definite “go-to” night.

I started with bulgur and garlic.

Then tossed together some red beans and heaven vegetables: red pepper, cucumber, zucchini, and kalamata olives.  

Topped with pine nuts, feta, lemon juice and zest, and balsamic vinegar.  

Sometimes the thrown-together meals are the best of all.
