tropical oats and king-size breakfasts.

Most of the time, breakfast is the largest meal I eat all day.  I believe strongly in that old adage: “Breakfast like a king, lunch like a prince, dinner like a pauper.”  It works for me.

Sometimes, it shocks me that I ever considered one packet of plain instant oatmeal, cooked in water, to be an adequate breakfast.  My oat-y bowls these days are quadruple that size.  And while that was initially a challenge, now I can’t imagine it any other way.  Logically, we haven’t eaten for an especially long stretch of time pre-breakfast, so it is only practical to fuel up with a substantial meal.  

Today was rainy and depressing – the perfect opportunity for a tropical-inspired breakfast.  If I have to zip up my leather boots and open my umbrella, I might as well spend the morning daydreaming of warmer, sunnier lands, no?

Mixed up in the pot:

  • 1/2 c oats
  • 1 c hemp milk
  • 1 mango, chopped
  • ~ 2 T thawed frozen cranberries
  • ~ 2 T raisins

Sometimes I get a little crazy over the stovetop: I actually took out the potato masher to mash the mango as it cooked.  Extra creaminess.

After cooking, I added some more flavor:

  • cinnamon, allspice, ginger
  • ~ 1 T ground flax
  • ~ 2 T chopped brazil nuts

Nut butter of the day:  cashew-pecan.  Such a cozy way to begin my day.

  • love your tropical oats! cashew-pecan butter! i am so making that tomorrow sounds amazing! i too also can not believe at a time i would consider just a small yogurt and fruit a breakfast…i also believe breakfast should be the biggest meal of the day, i dont understand when kids my age skip breakfast, it frustrates me lol, when they are like i didnt have time blah blah… then they end up being so hungry in the afternoon and eating loads of junk. but we know better ;)…the morning is the best time to get in most of your nutrients, break fast…you are breaking your fast from like not eating for over 8 hours or w/e…
    to answer your question, my meals are actually all the same size usually, i eat like 5 meals throughout the day, all around the same amount, my morning and afternoon snack sometimes feel like a breakfast…which can be hard to handle now, but i know i need it, and i know that it is good to eat through out the day to keep your metabolism going.

  • Yum, I love mango on oats! I haven’t made the switch to hot breakfasts yet, so mine are in stages, a green monster before I leave the house, then about 2 hours later about a 1/2 cup of yogurt with pumpkin and almond butter. It is rich and filling even though its a small portion!

  • It also drives me crazy that people SKIP breakfast. seriously?!?!
    I used to fear a high calorie breakfast, and just ate 2 boiled eggs… but now I am loving all the crazy filling and healthy combos of oatmeal. So, I would say breakfast is my largest meal. It keeps me full longer!

    Oh, and I’m liking your black coffee! (Couldn’t live without it.)

  • I def start my day with a large breakfast, I am always so hungry when I wake up! Lunch is usually pretty big too (plus snackies) and then after work and into the night my appetite usually gets smaller and I have a moderate portioned dinner :)

  • I definitely eat a substantial breakfast–it’s my favorite meal! And I’m with you, how did I use to get by with one measly packet of plain oatmeal?! Madness I tell you.

    I think all my meals are about equal, breakfast definitely is “bulkier” but I like that I get around the same amount of calories/nutrients at each meal (i don’t count though) ;)

  • Im someone who likes a big breakfast/lunch/dinner, i dont like to discriminate. Just playing, one thing i do try through it to make a meal based on my level of hunger. For instance, tonight it was like 5 hours since i had a pita-wich and i HAD to have a big oatey love when i got home at like 10:30. Rules be darned!

    I think i might have to whip out the cashew butter again, as i had some this morning as well and it was tem types of uhhhhhmaizing.

  • Yes I eat a HUGE breakfast. My logic is that you’ve waited almost 12 hours to eat…you should replinish and refuel. Lovely breakfast and I love how you mashed the mangos! I’m not really a lunch person so I usually have a big breakfast, snack- bowl of cereal, small lunch, snack and a medium dinner. Usually because I don’t snack after dinner. xoxo Have a awesome day!
