swampy oats.

When I began breakfast week, I claimed I never crave vegetables in the morning. That’s sort of a lie. There are several veggie-infused oat concoctions that are favorites of mine. Carrot-cake oats is a classic. I’ve tried zucchini bread oats to less exciting results, sweet potato oats to most delicious ones, and beet oats to create a beautiful, sweet, and pink bowl.  While I don’t grate vegetables into my oatmeal pot on a daily basis, my occasional experiments rarely fail.

This morning, I ventured to new territory. I had some leftover juice in my fridge that needed to be used – greens with apple, which is my standard when I’m in the mood for greens in liquid form. I’m not hardcore enough to do without the apple, at least yet.

I know some people swear by their mornings with veggie juice or green smoothies, but as I mentioned before, I like beginning the day with my warm bowl of grains. I get plenty of vegetables in as the day wears on.

But, that doesnt mean I’m not willing to give a veggie breakfast a try.  This morning, I combined the two styles, and I give you juicy green oats:

In the pot:

  • 1 c green juice
  • 1/2 c oats
  • 1/2 banana, sliced

After cooking, in went:

  • the other half banana, sliced
  • ~ 2T pecans
  • ~ 1T ground flax
  • ~ 1/3 c plain yogurt, for extra creaminess

Mixed up and topped with almond butter, it lost its green hue and took on a decidedly swamp-like tint. Of course, looks aren’t everything, whether the topic be people or food.

While I doubt this will become a regular breakfast, it was a fun alternative way to enjoy the juice.  Sure, it’s an acquired taste – but it’s one I’ve come to love.

    veggies in the AM? not too often at all, not a savory in the morning fan, but i LOVE carrot cake anything, so carrot cake oats are like my favorite ever! haven’t had that in a bit of a while hmmm maybe tomorrow or Friday? ;) so i guess i like having my veggies in a sweet way in the morning if i must have it… like zucchini bread or muffin or carrot muffin or loaf etc…and pumpkin oats, does that count? :) i want to challenge myself to a REAL carrot muffin, not in a oatmeal form…*note to self, new goal* :D

  • Oh my! I was planning on making green oats for lunch today! If I do make them for breakfast I will give your blog a shout out….after all you did an exceptional job with the flavor combination. Lovely as always!

    Love your adventurous culinary perspective, miss Leslie! You are quite the little oat master. I admire your sense of fun when it comes to food!

    I do not have veggies in the AM, but I would do a pumpkin/sweet potato/carrot type bread or baked good, if I ate baked goods. Haha! I’m quite fearful of them. Tell me to snap out of it :O

  • If I’m ever having veggies in the am, its with an already savory breakfast. often i’ll have an egg white omelet with spinach, or poached eggs with sliced tomatoes on the side.

    sweet breakfasts should be sweet! but your oats DO actually look kinda good. i’m thinking the banana saved that bowl, from turning into an all around green mess. :)

  • I had green oats for lunch today :) I have to admit that, like you, I prefer fruit inspired breakfasts (or at least some sweet version of oats). Pumpkin and carrots are as far as I’ve gone with veggie oatmeal, but I’ve had green peppers and other various vegetables in omelets (who hasn’t?). I must try sweet potato and butternut squash oats soon. Your swampy oats sound like a nice little twist on the traditional banana/flax/oat combo!

  • never had veggies in the am! i need my sweet friuts and muesli to get the started. but i guess if i ever had a green monster i wouldn’t mind putting spinach in

  • I do green oat bran pretty often. I agree, it’s a acquired taste, but once you get it, you’ll miss it. another great ingredient is cauliflower puree! oh…. I just remind myself to have some! :)
