sweet potato guacamole.

I’ve loved reading the comments on my last post!  Such great perspectives – keep them coming!

 

So, my obsession with avocados is not a new development for this blog.  They’re definitely one of my top five favorite foods, and it is rare that I go a day without incorporating one into a meal.

With autumn fully upon us  - I had to wear both boots and a jacket today! – my root vegetable cravings are rising to level with my avocado adoration.  Tonight I needed a creative way to satisfy my yen for both.

sweet potato guacamole (makes about 2 cups)

  • 1 avocado
  • 1 small sweet potato, steamed
  • 1/2 c black beans
  • 1/2 c corn kernels
  • 1 T chili powder (less if you don’t love spice)
  • pinch cayenne
  • salt and pepper to taste

In food processor or high speed blender, mix avocado and sweet potato (feel free to leave the potato skin on – I always do).  Remove from blender; stir in remaining ingredients.

Alongside some steamed kale – I went out for lunch today, and my salad was very skimpy on the greens.

Sweet potato and avocado is a combination I discovered and fell for long ago, so I was confident this wouldn’t disappoint.  I was right!

    Leslie, I love your blog! This dish looks like a veggie chili I made earlier this week– like poop. Poop that is really good for you. Unlikely combo that I’ve tried and loved? Grape quesadillas made with cheddar cheese. Don’t knock it til you try it, though I did wait until I was drunk because I really thought I would hate it (It’s not really that healthy though… probably wouldn’t make it into your blog). As a side note, I can’t wait to see you in a week!

    and love sweet potato and avocado so so good, i love spreading a s.tater with avocado :) i know today was so so cold, i wore so many layers and wore my winter coat and boots! i like the weather like this, i just hate the super cold months ahead…i think autumn is a perfect medium.

  • I had my first sweet potato/avocado combo last night (stuffed spuds courtesy of Lauren @ SayWhatYouNeedToSay) and it was soooooooo good!!! The recipe was a baked sweet potato topped with an avocado, tomato, white bean, basil and balsamic topping… yum :)

    Love the flavor combo! Sweet potatoes remind me of fall, and avocados of summer- So maybe this is a happy medium. I haven’t had avocado in ages…what’s wrong with me?!? Thanks for sharing such a brillliant idea.

  • hmm that gucamole looks delishious. it would actually pair my top favorite foods together :)
    hmm i love having small cherry tomatoes, cutting them in half and putting mustard on them. and i was told that penne with sugar and cinnamon are suppose to be really good. never tried it though

  • Someone posted yesterday asking if there was any food that wouldn’t taste great with a sweet potato- I can’t think of anything! Except maybe saurkraut :P Not saying I wouldn’t try it though ;)

    Unusual combinations- I was surprised how well cinnamon and blueberries go together! I don’t associate them as a pair and thought everyone was crazy adding both to their oats, but it’s great together!

  • I don’t know why I’ve never paired sweet potatoes and avocado, as they’re two of my favorites…and this looks like something I could actually make! I think it would be great on some toasted Ezekiel bread as an open-faced sandwich (or just spooned into my mouth.)

    A weird combo that I’m addicted to lately is Uncle Sam’s Flax Cereal and cottage cheese. The mush isn’t much to look at, but it’s SO good.
