These tomatoes were almost too pretty to eat.
Almost.
A couple years ago, when I was eating vegetables but didn’t have quite the same love for them I do now, I had placed tomatoes firmly on my “dislike” list. I’d eat them if they appeared on my plate, but I would never seek them out, and their presence in a restaurant dish would usually deter me from ordering it. But then, I tasted summer tomatoes – local, fresh, and perfectly ripe, and my opinion was forever changed.
I can’t bring myself to eat a fresh tomato any other time of the year. In the past, I’ve declared my grandmother’s garden cherry tomatoes to be near candy – and eating store-bought imitations in December can’t possibly compare.
Like I said last night, I’m soaking up every last summer flavor I can. Tomatoes are perfect right now, and they need to be consumed on a daily basis. So tonight I brought out the blender for some gazpacho, using the same method I did last time. I used a colorful heirloom and some yellow cherries, and the result was a fresh shade of green.
I bulked it up with some white beans, bell pepper, cucumber, extra avocado, and of course, bread for dipping. Can soup possibly be consumed without bread on the side?

I just feel wrong eating blueberries out of season. They’re my favorite food ever but it’s not natural to buy them in the dead of winter.

Those tomatoes are beautiful. Your photog is so fab. The gazpacho looks amaze! hope it was great to eat. Unfortunately, watermelon is still technically in season because its being sold in stores, but the taste is so out of season. prime time for w-melons has to be may-july. they start getting gross later in the summer :/ so that’s what’s out of season for me. boo!
Your green gazpacho is beautiful! I can’t eat tomatoes out of season. There’s nothing like a farm fresh Florida tomato in the middle of summer. The problem is: I really love tomatoes, so I end up buying some out of season and they’re just okay, but when I think about the amazing tomatoes that are ready in May, I cringe.
hmm that green gazpacho looks divine. and i totally agree with having bread for dipping. makes soups a whole lot better.
